Cranberry Mac Nut Oatmeal Bars

A soft chewy oatmeal cookie and a glass of cold milk can calm the most frazzled nerves.  I think they have some type of magical relaxation properties.  They’re so versatile that when you find a good recipe you can change up the ingredients according to your tastes and get fantastic cookes. This recipe can either be made as bar cookies or individual cookies but be careful not to overcook them.  The day I made these I wanted cranberries and macadamia nut but they would be just as good with any other dried fruit and nut combination.

Cranberry Mac Nut Oatmeal Bars

Ingredients

  • 2 sticks unsalted butter, softened
  • 1 cup light brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 1/2 cups rolled oats
  • 1 cup dried cranberries
  • 1/2 chopped cup macadamia nuts

Instructions

  1. Heat oven to 350 degrees.
  2. In large bowl, beat softened butter until creamy.
  3. Add white and brown sugar and vanilla and beat until mixture is fluffy – about 3 minutes.
  4. Add eggs one at a time and completely incorporate.
  5. In medium bowl, mix together flour, salt, baking powder.
  6. Stir together flour mixture and butter mixture with large wooden spoon.
  7. Stir in oats, cranberries, and nuts.
  8. Spray a 13 x 9 baking pan with cooking spray. Press mixture evenly into pan.
  9. Bake for 10 minutes and turn pan. Bake another 15 minutes.

    Mmmmm. These look delicious! As a chocolate fan, I can’t believe I’m saying this, but I think it’s time to put chocolate aside for a while and enjoy some lighter treats for Spring. This is the perfect treat!
